Umbrian Cooking School
Villa Milani proposes packages based on the typical Umbrian cuisine, where the charming and luxury atmosphere of the hotel is the environment of a unique, unforgettable culinary experience.
We propose cooking courses and lessons with famous chefs, to get to know the Italian and Umbrian cuisine, their flavours and dishes.
Guests who haven’t bought the package in advance, can reserve the cooking course or lesson during their stay in Villa Milani
The Cooking School offers two types of activity:
Umbrian cooking courses
The Course consists of 4 modules, each lasting 4 hours (1/2 a day)
N° of participants: min 2 – max 6
The Package includes:
- Six-night stay
- Welcome cocktail
- Preferred newspaper (also foreign newspapers, depending on their availability)
- Buffet or personalized breakfast
- Cooking course (see the program below)
- Tasting of the dishes cooked
- One dinner in the Villa or in a restaurant in the historic centre of Spoleto (wines excluded)
- Additional stays at reduced price
- Early check-in and late check-out (upon availability)
On request, the course can be done on different dates, predefined in advance according to the availability of the Chef
Program of the Umbrian Cooking Course
First day:
- Introduction of the teaching chef
- Overview of the history of Italian cuisine
- The diversities between North and South
- Umbrian main food products: olive oil, cheeses, truffles, salami, legumes, pastas, etc.
- Template of a typical menu with wine combinations
- Umbrian Cuisine
- Elaboration of some recipes (red chicory au gratin, with cooked ham, frascarelli pasta with wild mushrooms, sliced beef with wild herbs)
Second day:
- Liver pâté Umbrian style
- Spelt soup with crispy ham
- Cream of Borlotti beans with spinach dumplings
- Young turkey timbale with speck (smoked ham)
- Risotto with Rubesco wine and blue cheese
- Red chicory in batter with beer
Third day:
- Pecorino cheese with Amatrice sauce
- Stuffed Guinea fowl with canapés
- Roast potatoes
- Spoleto’s Crescionda (typical cake of Spoleto)
- Castagnole
Forth day:
- Pizza with onions
- Pizza with tomatoes
- Puff pastry with sausages and cream of truffles
- Battered aubergines with mozzarella cheese, basil and tomato
- Pennette pasta braised with tips of asparagus
- Strawberries in balsamic vinegar
- Crepes filled with chestnuts
Lessons of Umbrian cooking
The Lesson lasts about 4 hours and consists of the preparation of some traditional dishes of the Umbrian cuisine.

- One cooking lesson/demonstration
- Taste of the dishes cooked
